Bamboo sprouts that stem out of the roots. Peel and roast it to experience a mushroom-like texture and a soft flesh that goes well with all manner of sauces and condiments. Keep in mind, however, that the bamboo sprout doesn't have any flavor of its own other than its crunchy texture.
