Most mercenary companies emphasize on offense much more than on defense, but some basic defense skills are a must at any situation. Mercenary companies often receive a giant monster boss kill quest, and it was necessary to protect soldier's body with a big shield in battles like this. It was especially considered unimaginably insane to go into a battle against Golems or Ogres without such shields.
